i'm not bitter...really...

Ok, to prove I'm a good sport for getting the Weight Watchers axe, here's a WW version of a very Delicious Dish:

Chicken Spaghetti

8 oz. spaghetti/angel hair (I used the Ronzoni Smart Taste - it has the fewest points)
1 - 6 oz can 99% fat free canned chicken breast, in water (ok you know this grossed me out, so I just boiled a chicken breast or too and shredded it)
1 - 14.5 oz can Rotel, drained
1/2 c. chopped onion
1/2 c. chopped bell pepper
6 oz. 2% Velvetta cheese, cubed
1 - 10 oz can 98% fat free cream of chicken soup
1/4 teaspoon pepper
salt to taste

Preheat oven to 350. Break the pasta into 3 sections and cook according to package directions.

Spray a medium pot with non-stick cooking spray. Cook onion and bell pepper over medium heat until tender. Add the drained tomatoes, soup, cheese, chicken, salt and pepper. Cook until cheese has melted.

Stir in cooked spaghetti and mix to combine. Spray a 12x8-in. baking dish with non-stick cooking spray. Pour mixture into dish, cover and bake for 15 minutes. Uncover and cook an additional 15 minutes.

Serves 6 - around 7 points per serving.

Don't you just love Weight Watchers? I became a fanatic when I lost 50 pounds in 3 months...I'm now a lifetime member. I totally need to get back on that horse and ride it again, but I just can't bring myself to shell out the money each week. Thanks for the recipe! I'm gonna try it soon!

i've been craving chicken spaghetti-- lewis is on a diet ( i know, what??- he's lost 25 lbs! ugh.) so telling him it was weight watchers friendly would no longer scare him off!
