wish list wednesday

What am I wishing for this Wednesday?

* That I would run into Mandy Pantikin on the street somewhere. I would make him be Inigo Montoya for me for just a line or two.

* A Tiffany Key necklace. Of course the one I want is $1300. Anyone surprised? Didn’t think so.

* Some of Haley's Farris Wheel Pottery. So cute!

* A new suit. You never know when you might need to meet the President.

* Some berry-colored lip gloss. I hear it makes your pearly whites even whiter!

delicious dish

Ok, so it's Monday morning, I'm kinda sick, and I'm in the office on a state holiday. Do I get snaps or what? All I have to say is, thank goodness for Pandora radio.

And to start the week, I've got a Delicious Dish for you! It's not what I'd call a "light" menu item, but I'll be darned if it ain't good. I made it this week for Kell, and he loved it. Success.

Chicken Tortellini Casserole

2 packages tortellini (8 oz size)
8 ounces Monterey Jack cheese, divided
4 boneless, skinless chicken breasts
flour for coating
3 tablespoons olive oil
3/4 cup onion, chopped
1 tablespoon chicken bouillon granules (I just used 2 cubes)
1 cup chicken broth
1 can mushrooms (4 oz size), drained
1/2 cup sour cream

Preheat oven to 300 F. Place pasta in bottom of lightly greased 8 1/2 x 11 inch pan. Sprinkle half of the cheese and spread evenly over the pasta.

Roll chicken breasts in flour and lightly brown in olive oil (I didn't use the flour - I just browned the chicken pieces in a skillet). Remove chicken from pan and place on top of the cheese in the casserole dish.

Cook the onions in the same pan until transparent. Add bouillon. chicken broth, and mushrooms. Bring to a slow boil and cook for 5 minutes.

Add the remaining cheese and continue cooking until cheese is melted. Turn off heat. Add sour cream and blend well.

Place the chicken pieces over the tortellini in pan. Pour the sauce over the chicken and cover with foil. Bake 45 minutes at 300 degrees.

*I also used reduced fat cheese and fat free sour cream. I realize that with all that pasta it doesn't really make a hill of beans difference, but it made me feel better.

What am I wishing for this Wednesday?

* That McDonalds delivered. I could totally go for an ice cream cone right now.

* One of the gorgeous rugs from Anthro. Perhaps this one? I could most definitely find it a home.

* Something gorgeous and beachy to wear to all THREE of my beach trips this summer! (I feel as though it should be noted that I have not been to the beach in – count ‘em – 10 years!)

* That The Office would return to the glory days of Seasons 1 and 2.

* That I were in Paris today!

Thanks to the volcanic ash in European air space, I had to cancel my trip to London and Paris this week. I'm quite disappointed as you may imagine, but I'm saying many little prayers for those that are stuck there.

moving on

I hate disappointing a friend. In all honesty, there are few worse feelings in the world. So imagine my sadness when I had to put down the book I was reading, Family Affair. I've made no bones about my love for Jen Lancaster, the friend (I should probably note that she does not know that we are friends) who recommended the book to me. She gave it such a glowing review, and I hold her in such high regard that I felt certain I would love the book as she did. Sadly, I did not. Although I don't particularly like giving up on a book, I don't let it get to me. I'm an adult, and I don't have to read anything I don't want to read. So there.

That said, I'm moving on to a modern classic that I've never read: Midnight in the Garden of Good and Evil. Harris loved it, and I love Savannah, Georgia. I'm giving it a try. Here's hoping!
I'd planned on starting to read it on the flight to London on Saturday, but since some volcanic ash seems to be in the way, who knows if I'll get there at all. I'll keep you posted as I am certain you will lose sleep over my travel plans.

What did we do Saturday night? Well, thanks for asking. Kell and I had plans to grill some most excellent tuna, and this happened. Olive had a run-in with her favorite ball and broke what I called her "thumb" nail/claw. One hour at the animal ER and a swipe of the debit card later, Olive was all bandaged up with meds in tow. She squealed so loudly while in the care of the sweet vets and techs, they came into the waiting room twice to tell us they weren't mistreating her. Who knew dogs could be drama queens?
